• Light: Brighter and livelier, often with floral and fruit notes, highlighting the coffee’s acidity.
• Medium: A balanced cup, still fruity and sweet, with rounded acidity.
• Dark: Bolder flavor with complex herbal and earthy tones. Some beans may show oil spots.
• Roaster’s Choice: This is what I’m drinking and how I’m roasting it—typically a blend of light to medium roasts. I want the acidity to sparkle, and I’ll geek out over brewing methods, water chemistry, and water temperature, all in pursuit of the perfect cup of coffee.
