From Farm to Cup

Most coffee in Peru is processed by hand on the producer's farm, and Kovachii is no different. Cherries are harvested, de-pulped, processed, and sun-dried on patios, beds, or tarps. Farmers from across Cajamarca bring their finished parchment to a warehouse in Jaen or local buying stations for evaluation. Samples are taken, the green is assessed, and the coffee is tasted—then a price is agreed upon, and the coffee moves into storage. To create Kovachii, only the highest-quality selections from these smallholders lots are chosen then milled and prepared for export.
